Let’s Do Brunch!

eggsWith spring on the way and Mother’s Day in May, why not sharpen your brunch skills with a cooking class at KITCHEN featuring Chef Tracy.

This cooking class will teach you some fun twists on brunch staples. Crepes filled with chocolate and nuts, Brie and fruit-stuffed French toast, vegetarian eggs benedict with basil hollandaise, and bacon asparagus quiche. To finish off, Tracy will whip up banana spring rolls with rum caramel sauce.

From the Sea

In this cooking class, you’ll learn from Chef Brad how prepare fish and shellfish from the world’s oceans.

We’ll make Icelandic cold water Arctic char, pan-seared with grainy mustard beurre blanc. Also on the menu will be scampi risotto, pan-seared scallops with polenta, cod with sofrito and sausage. We will cap off the class by making a light panna cotta with berries.

Mardi Gras Cooking Class

Laissez les bons temps rouler! Every March at Kitchen, our thoughts turn to warmer weather and warmer (aka: spicier) food. What better way to help ease the mid-winter blues than exploring the food of Mardi Gras!

Join Brad and Tracy and learn how to make celebrated classics: jambalaya, gumbo and crawfish etoufee. To get the party started, we’ll whip up pecan hummus, as well as crab and artichoke dip. To top it all off, we’ll prepare the southern staple, a pecan tart.

North American Italian Cooking Class

TomatoesThis KITCHEN cooking class will teach you some of the classic dishes straight out of Italy, as well as some Italian recipes adapted for life here in North America.

Get ready to make rustic Italian cuisine that’s simple in its approach and ingredients. We’ll make fresh tagliatelle with Bolognese sauce, fluffy light potato gnocchi, vegetable contorni, classic “Sunday gravy” and to finish off, a chocolate and cherry tiramisu.

We will be exploring the culinary uses of the herbs AND the health benefits too. We will prepare delicious paella, Tikka Masala, lamb tajine, roasted spiced peppers and cardamom crème brule. You’ll also learn the proper application, storage and tips for buying fresh and dried herbs and spices.

It’s Alberta. You know it’s going to be cold out outside. Whether you’re skiing, snow shoeing, making snow angels or just going for a walk, nothing is better than coming home after a day in the snow to the smell of comfort cooking up in your oven.

In this cooking class, you’ll learn to make THE perfect roast chicken (I promise you will never buy another store bought roast chicken again), Hungarian ghoulish, “Not your Mom’s” shepherd’s pie, pork adobo, and Nutella pound cake.

Italian Winemaker’s Dinner: December 7th, 2016

On Wednesday, December 7th, KITCHEN by Brad Smoliak and Enotri Wines will be hosting Francesca Dal Cero, of Dal Cero Tenuta di Corte Giacobbe and Dal Cero Tenuta Montecchiesi in Italy.

francesca-dal-ceroFrancesca represents the third generation of a family winery that started in 1934. She is the eldest of three siblings and handles the export markets, while her younger brother Nico handles domestic markets, and Davide is responsible for making their fabulous wines. A cousin manages their vineyards in both Soave and Cortona, so with this winery, everything is the hands of family.

Francesca will be introducing us to a number of their exceptional wines over dinner. Get ready to try…
