Comfort Cooking for Chilly Nights
This cooking class focuses on foods that will comfort and inspire you on chilly winter nights. In this class, Chef Tracy will demonstrate how use fresh seasonal produce in comfort cooking, and how to preserve and store the season’s offerings for winter use. In this class, you’ll learn how to make (with you tasting every single dish):
Sweet pickled beets
Pickled carrots with a hint of spice
Fall vegetable casserole
Pumpkin crème brulee
Classes are three hours, running from 12:30pm to 3:30pm on Saturday, November 16th.
There are only 8 spots per class, and the cost is $145.00 per person plus GST which includes instruction, food tastings, wine pairings and all the recipes to take home.
Art of the Dinner Party Cooking Class – SOLD OUT!!!
A lot of people ask Chef Brad what he serves at his own dinner parties. If you’ve met Brad, you know he’s more interested in hanging out and drinking wine and visiting with his guests than cooking.
In this cooking class, you will learn to prepare one of Brad’s favourite fall dinner party menus. Most of the dishes can be done ahead of time and require very little last minute preparation. And because Brad believes it is always more enjoyable to cook as a couple or a team, he will will show you how to divide up the tasks and have a fun night for all.
In this class, you’ll learn (and taste) how to make:
For the cocktail hour: gougers and pickled shrimp
Soup course: roasted parsnip and porcini
The entree: braised lamb shanks done osso bucco style, farro risotto and roasted winter vegetables
And for dessert: pear polenta pie with fresh rosemary and Sambuca whipped cream
